With Potato Cheezz, Aviko Rixona offers a sustainable alternative to cheese that is not only more environmentally friendly but also widely applicable in various food products. “By using potato as a base ingredient, we help companies in the food industry reduce their CO₂ emissions,” says Carl Wessel, Business Development Manager at Aviko Rixona.
The CO₂ emissions of Potato Cheezz are approximately 15 times lower than those of dairy-based cheese. In a Life Cycle Analysis (LCA), Potato Cheezz scores between 0.5 and 0.8 kg CO₂ equivalent, whereas regular semi-hard cheeses range between 7 and 13 kg CO₂ equivalent.
Replacing animal-based cheese with Potato Cheezz leads to more sustainable food production and a significant reduction in CO₂ emissions across the food industry. Hybrid combinations of dairy cheese and Potato Cheezz are already commonly used. A hybrid cheese bun, where part of the cheese is replaced by Potato Cheezz, already reduces CO₂ emissions by as much as 24%.
